Gluten Free & Vegan Lebanese Rice Pudding

This Gluten Free & Vegan Lebanese Rice Pudding can be served hot or cold however I prefer it warm so I suggest trying it this way. From so little ingredients there is so much flavour and is a classic middle eastern dish to make. It is perfect if you want to try something different and stun your dinner party guests. This recipe will make for 6 people and take about 30mins. 

Ingredients

  • 4 cups of almond and coconut milk 
  • 10 teaspoons of sugar 
  • 1/2 cup of rice
  • 2 tbsp cornflour
  • 2 tsp orange blossom water
  • Pistachios for garnish

Directions

  1. Rinse the rice and then let it dry
  2. Blitz the pistachios in a mixer until they are fine
  3. Boil and stir continously the rice, milk and sugar on a low heat for 15mins
  4. As the rice softens add the orange blossom water and corn flour and carry on stirring for another 5 mins
  5. Take off the heat and place in your serving bowls, sprinkle the pistachios on top, either serve warm or place in the fridge for 30mins and serve cold
